The historic olive oil mill
The milling of our olives is a unique feature of "Terre dei Trulli" oil: this, in fact, it takes place within 24 hours from the harvest, in a historic mill in Alberobello, recalling the ancient traditions of oil processing and now the perfect location of our authentic recipe for Alberobello gold.

Cima di Mola
Perhaps the oldest among the local cultivars of the Apulian Murgia, which has always been known as "Pizzutella". The type of harvest, exclusively by hand, and the rather low yield, risked making it disappear. But in recent years, thanks also to the Slow Food presidium, it has taken the place it deserves.
The oil obtained is used to create blends of highest profile and quality.
The taste is quite intense and the bitter and spicy notes stand out on the palate, notes naturally conferred on it by the very high content of polyphenols; finally, it has a high and pleasant persistence and good fluidity.
Leccino
The Leccino olive is, by all odds, the most widespread and well-known cultivar all over the world. With a light fruity flavour and a golden yellow colour, with greenish hues, Leccino oil is generally recognized as an excellent quality oil. an excellent quality oil.
It features a very balanced taste, with hints of bitter, spicy, sweet and fruity and notes of almond.
Olivastra
Typical cultivar of Apulian secular trees, Olivastra is also called Red Olive due to the characteristic colour it reaches during the ripening period.
It is a widespread variety in the area between Alberobello, Locorotondo and part of the Itria Valley. It is mainly harvested by hand and has a medium-sized fruit, with a pleasantly bitter taste with spicy hints. An harmonious and rich extra virgin olive oil is obtained, which combines aroma and body, equidistant between the various components, none of which ever prevails over the others.

Sweet and well-balanced fruitiness with pleasant hints of almond, light hints of bitterness, pleasantly spicy towards the end, the "Terre dei Trulli" Classic Olive Oil combines different varieties of olives, giving harmony to the mouthfeel.
